Their stated mission to enable healthier, tastier, and more sustainable foods by “unlocking the full potential of plants through AI”. It has been described as closely linked to Climax Foods Inc, a Berkeley biotech that applies machine learning to formulate plant-derived proteins engineered to match or surpass animal-based counterparts in taste, nutrition, and function. In particular, Climax Foods has reported an AI-optimized plant-based replacement for casein, the milk protein central to cheese stretch, melt, and texture, highlighting the feasibility of precision formulation for dairy alternatives. Within the broader alternative protein sector, the company’s focus aligns with efforts to reduce environmental impacts while maintaining culinary performance, using computational ingredient discovery and validation. I first learned about Climax through 📝Chantle Edillor when we attended one of their tastings and met the founder, 📝Oliver Evans. We met him again at the 📝Good Food Conference in 2023. I've been astonished by the realistic taste and texture of their entirely plant based cheese and can't shut up about the nerdy process in which it's created.
