By bridging ancient @fermentation traditions with modern research, the company seeks to unlock the health potential of fermented foods through studies, educational initiatives, and product development. Its research explores how microbial communities transform ingredients into nutrient-rich foods and generate bioactive compounds with potential benefits for inflammation and digestion. Microcosm Foods is also committed to @open science, providing public access to datasets and @open-source tools, and disseminating research through blog posts and educational outreach. The team includes founder @Rachel Dutton, an expert in food microbiomes; @Chantle Edillor, a scientist specializing in @yeast-bacteria interactions; Matthew Schertler, who links @plant-based foods to human health; and Elizabeth McDaniel, a computational biologist employing metagenomics and machine learning to study fermented foods.
