Fermentation 2021 is the first annual conference put on by šThe Fermentation Association (TFA). The event is for all fermentation enthusiasts--hobbyists, chefs, scientists, academics, producers, retailers, and anyone interested in building their fermentation fluency. [1]
Nearly 300 individuals from around the world participated in The Fermentation Associationās first conference, FERMENTATION 2021. The virtual event included 35 educational keynotes, presentations, and panel discussions from more than 60 speakers over three days. Topics ranged from the science of fermentation to the art of fermenting to create flavor, from how fermented products are selling at retail to whatās next in the world of fermentation. [2]
šFermenters Anonymous made plans to attend Fermentation 2021 together in Chicago, but were just as delighted to attend it virtually when the switch was made and were nerding out throughout.
Reflections
āIāve been in this field for 40 years and, in all honesty, this is one of the biggest honors Iāve received, to be the speaker for this opening meeting of this really cool organization,ā said Bob Hutkins, professor of food science at the University of Nebraska. Hutkins presented the conferenceās opening keynote, Definition & History of Fermented Foods.

Fermenters Anonymous will be attending Fermentation 2021 in Chicago on November 6-8, 2021. Hosted by The Fermentation Association, anyone interested in learning everything about fermentation (from the science behind it, to developing techniques, to and fermentation trends) is welcome and encouraged to come.
